Combine zucchini, onion, bacon, cheese, sifted flour, oil & lightly beaten eggs. Season with salt and pepper and poor into well greased lamington tin. These Almond Flour Maple Cookies are vegan, paleo friendly, gluten-free and easy to stir up. Great idea for appetizers, or dessert. The cooking is a little wonky tho. Of course all ovens and appliances are different so that wont matter. This recipe made about 2 dozen 2 inch cookies. I used: 3 Cups Almond flour 1 Cup Maple syrup (I like the real stuff) 1 teaspoon Baking powder 1 Tablespoon Vanilla I stirred them. I shaped them. (1/4 to 1/2 inch thick and somewhat round.) I baked them. ( 350 degrees 13 minutes.) I ate them. ( I shared some too.) Is Vanilla Extract really Paleo? IDK I did like the cookies, and I did not have any vanilla beans on hand for the video.
