This shredded beef recipe is really delicious and easy to make. We are even going to flame it.
This recipe is adapted from the The Silver Palate Good Times Cookbook.
Comforting Shredded Beef Recipe:
Ingredients:
2 tablespoons unsalted butter, sometimes I use regular
3 tablespoons olive oil
1 bottom round roast (4 pounds)
Salt and freshly ground black pepper, to taste
½ cup cognac or brandy
2 cups beef stock
1 1/2 cups (more as needed) Chianti or other full-bodied red wine
Directions:
Melt the butter and oil over medium high heat in an oven proof roasting pan. Rub the roast with salt and pepper.
Add the roast to the pan and brown (sear) all sides. Turn off the heat and add the cognac to the pan. Relight the heat to low and light the cognac. Keep a lid nearby if the flame gets too large.
Add the beef stock and wine to the pan. Cover and cook in a 325 degree F. oven for 3 to 3 1/2 hours.
In the mean time let"s cook the onions.
Ingredients:
4 yellow onions, sliced
1/2 cup unsalted butter
1/2 cup sugar
3/4 cup red wine vinegar
1 cup chianti red wine
1/2 tsp. salt
pepper
olive oil
Directions:
Melt the butter and olive oil in a large sauce pan over medium heat. Add the onion, vinegar, wine, sugar, salt, and pepper. Stir to combine.
Cover the pan and cook on low heat for the first hour. Remove the lid for the remaining 2 hours stirring occasionally.
When the roast is done, remove it from the oven. Place the meat on a cutting board to shred with two forks. Place the shredded beef back in that nice wine sauce to keep warm.
Serve this dish over white rice or mash potatoes and top with those onions.
